Tomeu Llabres leads the charge of innovative quality in Mallorca. Focusing on native grapes, he produces wines that intentionally reflect terroir and encompass the strong winds that blow through the vineyard off of the mediterranean. This crisp, clean white wine composed of Moll variety grapes really slaps and has become one of my favorites. Leading with herbs and a hint of lime, this wine is round, creamy, and a finish of fennel. A truly complex and endearing flavor palette, pair this wine with fish, mediterranean food or any vegetables and herbs.
The very young and serious white 2024 Supernova Moll has an elegant and insinuating nose, not really very expressive but with a sense of intensity that makes it very attractive. Twenty percent of the wine fermented in 500-liter barrels and the rest fermented and matured in stainless steel and was kept with lees for three months. It slowly opens up in the glass to reveal some herbal notes with a Mediterranean character of fennel and aniseed. It has contained ripeness, 12.5% alcohol, a pH of 3.35 with 4.5 grams of acidity and comes through as balanced and fresh with a tender, clean and focused palate with a salty and bitter twist in the finish. 19,000 bottles produced. It was bottled in April 2025.

The finish, with a surprising yet unobtrusive bitter touch, imparts character and ensures each sip has its own distinct personality. A wine that endears itself and knows how to accompany simple moments with a knowing nod to Mediterranean joy.
